- 1 tbsp Ginger garlic paste
- 2 tbsp Shaahi biryani masala
- 2 Cardamom
- 3 Cloves
- 1 Cinnamon
- 2 Bay leaves
- 7 Peppercorns
- 1 Star anise
- As needed Oil
- As needed Ghee
- As needed Cream
- as needed Water
- to taste Salt
Steps to make to make Veg Dum Biryani
- Soak basmati rice for 30 mins and cook it until it's half done by adding a bay leaf, 4 peppercorns, a pinch of salt to it. Drain the excess water and keep a side.
- Take a pan add 3 tbsp of oil, 6 tbsp of butter, all mixed spices and sautè it. Add 3 sliced Green chillies, chopped onions and sautè it, now add Ginger garlic paste to it and fry it.
- Add tomato puree, turmeric powder, biryani masala, chilli powder, salt, 1/2 cup fried onions, 1/2 cup coriander, 1/4 cup mint and sautè it. Now add curd and sautè it until oil is separated.
- Add all the paar boiled veggies (your choice), paneer and fry it for 5 mins in medium flame. Add 1 glass of water and bring to a boil.

- Now add half batch of cooked basmati rice, green chillies, a pinch of biryani masala, 1 tbsp ghee, chopped coriander, mint, 1/2 cup brown onions, 1 tsp cream. Repeat this for one more layer with remained rice and sprinkle some water. Top it with lots of chillies and brown onions.
- Seal the pan with silver foil and lid it up. Cook it for 7 mins at low flame(Dum). It's ready to serve!
