  1. For Paneer Marination:
  2. 1 cup Curd
  3. 1/2 tsp Turmeric Powder
  4. 3/4 tsp Ginger Garlic Paste
  5. 2 tsp Biryani Masala

  7. 1 tsp Chilli Powder
  8. 15-20 Paneer Pieces
  9. 1/2 Green Bell Pepper (Cubed)
  10. 1/2 Onion (Cubed)
  11. 2-3 tbsp Mint Leaves
  12. For Frying:
  13. 2-3 tbsp Oil/Ghee
  14. 10-15 Cashewnuts
  15. 2 Potatoes
  16. 2 Large Onion (Sliced)
  17. Spices:
  18. 1 Bay Leaf
  19. 1 " Cinnamon Stick
  20. Few Whole Peppercorns
  21. 3 Cardamoms
  22. 4 Cloves
  23. 1 Star Anise
  24. For Layering the Biryani:
  25. 1 cup Basmati Rice
  26. 1 cup Water
  27. 4 tbsp Coriander Leaves (Chopped)
  28. Leaves Few Mint
  29. 1 Pinch Biryani Masala
  30. 3 tbsp Saffron Milk
  31. Salt (As required)

Steps to make to make Kesar Paneer Biryani

  1. In a large mixing bowl, add curd, turmeric powder, ginger garlic paste, biryani masala, chilli powder and salt. Mix the spices with the curd with the help of a whisk. Add the paneer cubes, cubed green bell pepper, cubed onions and mint leaves. Mix gently. Do not break the paneer. Keep aside to marinate for 1 hour.
  2. In a frying pan, add oil/ghee. When hot, add cashewnuts and fry till light golden. Remove and keep aside. Add potatoes and fry till light golden. Remove and keep aside. Add sliced onions and fry till the onions are golden brown. Drain all on kitchen towel to absorb the extra oil.
  3. Layering the Paneer Biryani: In a cooker, add oil/ghee. Add all the whole spices and fry till they turn fragrant. Add the marinated paneer. Spread it out. Add basmati rice (soaked for 30 minutes). Spread evenly over the paneer. With a wide spoon, create gaps between rice and paneer. Add 1 cup of water. Make sure the rice grains are immersed in water. Over it, spread chopped coriander leaves and mint. Spread some fried onions over it. Add a pinch of biryani masala over it.
  4. Now add saffron milk. (Soak a pinch of saffron in 3 tbsp warm milk).
  5. Sprinkle some salt. Cover the cooker alongwith the whistle. Cook for 20 minutes on low flame.
  6. Finally, once the pressure settles down, open the lid. Garnish with fried onion, fried potatoes, fried cashewnuts and coriander leaves. Serve warm with yogurt raita or salad.
